Skyr is where the SkyrBiotics® story begins, but not where it ends.
Skyr helped bring protein to the forefront of dairy and made high protein products feel natural, everyday and mainstream. But as protein becomes expected, it becomes less powerful as a point of difference. The next opportunity is to build on that foundation with credible biotic functionality and move dairy from high protein to higher purpose.
Food is no longer expected simply to nourish and taste good. Consumers increasingly look for science-backed benefits as part of everyday nutrition, including functional microbiome support in foods and beverages, not only in the supplement aisle.
Yet biotics are still often treated as a checkbox. “Contains probiotics” or “contains postbiotics” has become a commodity claim, while “live and active cultures” has become a generic category claim that does little to distinguish one product from another.
Fermentation cultures help create the taste and texture of many of the dairy products we have come to know and love, including skyr, yogurt and cottage cheese. But broad culture claims do not tell consumers whether a defined biotic has been added for a specific functional purpose.
Gut health is complex, but complexity is not the problem. Vagueness is.
